Banana caramelada à moda oriental

Ingredientes:
1 pitada de sal
1 colher (sopa) de óleo
250 g de açúcar
2 xícaras (chá) de farinha de trigo
1 ovo
1/2 xícara (chá) de cerveja
óleo de milho para fritar
1 colher (sopa) de fécula de batata
8 bananas-nanicas médias partidas ao meio

Modo de Preparo:
Para a massa, peneire a farinha de trigo, a fécula e o sal. Junte, aos poucos, a cerveja batida com a gema. Continue a bater até obter uma massa lisa. A massa deve ter consistência de cair da colher. Por fim, incorpore a clara batida em neve e o óleo e misture delicadamente. Coloque em uma panela o açúcar e 225 ml de água. Leve ao fogo baixo e misture delicadamente até o açúcar se dissolver por completo. Deixe ferver por 40 minutos, sem mexer, até obter ponto de crosta dura, que é verificado quando a calda fica quebradiça. Espete a banana com um garfo, passe na massa e coloque-a na panela com o óleo bem quente. Frite por 25 minutos, ou até dourar de maneira uniforme. Em seguida, banhe a banana no caramelo ainda fervente. Retire, espere o caramelo secar. Se preferir, polvilhe as bananas com sementes de gergelim.
